Chicken rice is so ubiquitous in Singapore, that we often take it for granted, forgetting the toil and efforts behind the creation of the Singaporean delicacy. This audio slideshow visits this familiar dish through the eyes of an hawker, Mdm Lee Ah Yoke.
Chicken rice for her, represents her livelihood and her past. As a migrant from china, chicken rice represents her escape from harsh post war china, providing for her and her son, enabling them to survive through the years.
Moreover, it captures snippets of Singapore hawker heritage, allowing us into the food scene of the 1950s, where illegal hawkers had to flee whenever the police, or “mata” came by.
Chicken rice, hence, is no longer a mere dish for mindless consumption. It brings to light the sweat and tears involved and is part of food and hawker heritage. it emboldens the food culture that we, singaporeans hold dear to. and for Mdm Lee, It is her story.
